Paul found the recipe for this chicken, bacon and wild mushroom risotto on the bbc good food website. The recipe does need dried porcini mushrooms and wild chestnut mushrooms so we ordered all the ingredients online as we decided to try online grocery shopping for the first time. I know we are late coming to the party on this one but we are now on our third delivery so I think we can safely say we are hooked!
As with all first time recipes it took a little longer to make than stated, we added chicken and turkey as that was what we had in the freezer and you also have to flit between this recipe and the basic risotto recipe but the result was a very delicious and comforting meal which was given the thumbs up by all.
This quote from Tomas sums it up perfectly "it does look disgusting but it tastes delicious"!
Let me know if you have a good risotto recipes as we are keen to try some more.
Well that's today's lunch sorted!

Yummy risotto - our son makes a lovely one with lardons. It's fantastic student food too!
ReplyDeleteI was looking back over your posts, you have done some lovely swaps recently. I do admire your personal challenge to craft every day - the embroidery work you have been doing is very pretty. Betty
Dear Tracy
ReplyDeleteWe love mushroom and pea risotto in our house, and Nigel Slater has a great recipe for leek risotto which is super simple and utterly delicious! Good luck with your risotto odyssey!
Best wishes
